How can I convert .doc files to PDF preserving fields via Aspose.Words for Cloud API, like via Aspose.Words for .NET via PreserveFormFields?

You can preserve Form Fields using SaveAs API by passing following saveOptionsData parameter. You can check PdfSaveOptions properties for more control on DOC/DOCX to PDF conversion.
