Unfortunately at present Aspose.Pdf for Cloud APIs does not support PDF to Excel conversion. Though, our native APIs (Aspose.Pdf for .NET and Aspose.Pdf for Java) support this conversion.
I have logged a feature request in our internal tracking software (PDFCLOUD-121) and requested Product team to provide support for this feature at the earliest.
I will update you here once I have some information from the Product team.
